David Grutman

David Grutman is an American hospitality entrepreneur and innovator. His creations are synonymous with Miami’s vibrant nightlife. Groot Hospitality, David’s collective of more than a dozen restaurants, hotels and nightclubs includes some of the most iconic venues in the country including LIV at the Fontainebleau Hotel Miami Beach. 

While South Florida has long been known for its extensive food, beverage and hotel offerings, Grutman helped to usher in a new paradigm. He re-cemented the Miami area as a contemporary hot-spot by imagining dining, hospitality and nightlife through a lens of lavish design, in-demand talent, a helping of celebrity, social media moments, and most importantly, escapist fun. Grutman and his Brazilian-born wife, Isabela, along with their two daughters live and breathe the Miami lifestyle.

360 ENTREPRENUER

In 2008, Grutman opened the nightclub LIV at Fontainebleau after the famed hotel underwent an extensive renovation by ownership. LIV quickly proved to be an anchor after-hours attraction, attaining worldwide buzz and a celebrity clientele. After much acclaim for LIV’s success, David turned his attention to creating exceptional dining experiences and launched Komodo in 2015 and then more recently Swan and Swan Upstairs in the Miami Design District – the crown jewel of culture, real estate and aesthetics.  

The Groot Hospitality portfolio continues to flourish under Grutman’s leadership. The collective now includes multiple nightclubs and restaurants around the city, and during the Spring of 2021 he opened his first hotel in collaboration with American record producer, rapper, singer, songwriter Pharrell Williams. While Miami will always be home, Grutman’s real estate and lifestyle brand expansion include new venues in Dallas and other cities.

INNOVATOR

Grutman is a tireless innovator with a gregarious and hospitable nature. The visionary sees opportunities others don’t, and embraces the challenge of bring new life and energy to unique spaces. In the summer of 2021, David and his team opened three new food and beverage outlets at Miami Beach’s restored Firestone Garage complex on Alton Road. These include Sushi Fly Chicken (a pan-Asian homage to the Tokyo underground scene), Winker’s Diner for classic American fare and Toothfairy (Groot Hospitality’s first dedicated bakery). His creativity knows no bounds. 

Outside of hospitality, Grutman is the creative director and co-owner of Prince, the athletics and lifestyle company. This endeavor dovetails perfectly with his passion for tennis, wellness and fitness. David shares his experience and spirit with students at Florida International University, where his class named “The David Grutman Experience” focuses on what it takes to conceptualize and create a world class hospitality platform.

POP CULTURALIST

David draws inspiration from many sources, but art and music have always been catalysts for him. His home is artfully curated with an eclectic blend of modern art and vintage works, creating a fun and energetic vibe for family and friends.Keeping in tune with pop culture and the underground scene gives David his creative edge.  

The cultural melting pot that is Miami gives Grutman inspiration, and he’s especially proud of his city and all the exciting development going on there. His Miami Design restaurant Swan & Swan Upstairs is a perfect example of how David uncovers how neighborhoods are constantly transforming themselves with creatives and the entrepreneurial spirit.

FLYING SPUR W12

The timeless and elegant Magnetic exterior color gives off a cool, precious metal effect thanks to the high level of silver fleck added to the grey. Inside features a Saddle Main hide, complimented by a rich Burnt Oak secondary hide. Each hide is selected by hand from herds raised in northern Europe, where cooler temperatures mean fewer insects, so fewer blemishes. 

The Dark Fiddleback Eucalyptus Veneer is straight grained giving a modern appearance to the cabin. This veneer takes its’ name from the origin of the craftsmanship of string instruments. This example is also equipped with the Bentley Touring Specification, which includes a heads-up display, night vision and lane assist.
